Maison Billecart-Salmon was founded in 1818 in Mareuil-sur-Aÿ, Champagne, when Nicolas François Billecart married Elisabeth Salmon and the couple established the house together, later joined by Elisabeth's brother Louis Salmon. Remaining family-owned and independent for over two centuries, Billecart-Salmon is known for its pioneering use of cold fermentation and separate-parcel vinification, techniques that preserve delicate aromatics and genuine terroir expression across its range.
