The winemaking is genuinely meticulous: fruit is hand-picked into small bins to preserve purity, a portion of the juice undergoes natural fermentation without inoculation, and every 225-litre French oak barrique — new and seasoned alike — is treated as its own individual ferment, with regular lees stirring and full natural malolactic fermentation building texture and complexity. The 2025 vintage benefited from mild-to-warm summer temperatures that allowed flavours to accumulate gradually without heat stress, preserving natural acidity and giving winemakers precise control over harvest timing across different vineyard altitudes.
