The brand takes its name from a rare variety of "Satozakura" cherry tree that produces yellow double-petaled blossoms, adopted by the company's founder for its unique beauty. Kizakura pairs traditional brewing techniques with modern methods and a commitment to environmental conservation, crafting a broad range of sake — from accessible, everyday styles like Yamahai Jikomi to premium Junmai Daiginjo releases — and is widely regarded as one of the most accessible and food-friendly Japanese sake brands available internationally.
Yamahai is one of the most demanding traditional sake brewing methods still in use — a revered technique descended from the older Kimoto method, where brewers once had to painstakingly mash rice and koji by hand into a puree to accelerate fermentation. Yamahai simplifies that labour by relying on naturally occurring wild lactic acid bacteria over a longer 4-6 week fermentation, rather than the faster, more common method of adding lactic acid directly — a slower, more hands-off process that builds genuine width and depth of flavour. Kizakura draws on Fushimi's famous soft groundwater, "Fushimizu," often described as giving Kyoto sake a distinctly gentle, feminine character (known as "onna-zake") compared to the firmer, more masculine styles associated with other regions like Nada.
