Most Sauvignon Blanc is made simply and quickly to preserve freshness, but Leeuwin Estate takes a more layered approach with this release — 30% of the wine is barrel-fermented in one-year-old French oak and matured on lees for four months with fortnightly batonnage (lees stirring), techniques more commonly associated with premium Chardonnay than Sauvignon Blanc. That extra work gives this wine genuine textural complexity and savoury depth that sets it apart from the simpler, purely stainless-steel Sauvignon Blancs that dominate the category.
