The Mount Pleasant Cellar Aged Elizabeth Semillon is one of Australia's most historically significant white wines, first created by legendary winemaker Maurice O'Shea in 1956 to honour the first-ever visit to Australia by a reigning monarch, Queen Elizabeth II. Made from Mount Pleasant's own Pokolbin estate vineyards and deliberately held back at the winery — typically released around five years of age — it's unoaked, fermented cool in stainless steel, and left to develop naturally in bottle. Bright citrus and lime in youth give way to toast, honey and lanolin with time, making it the benchmark example of aged Hunter Valley Semillon, without the customer needing to do any of the cellaring themselves.
