Gabriel Boudier is a family-owned French liqueur house founded in 1874 in Dijon, originally established in the house of Fontbonne before Gabriel Boudier took over the business in 1909 and renamed it after himself. In 1936, following Boudier's death, his widow sold the house to Marcel Battault, whose family has steered Gabriel Boudier ever since — making it the only remaining independently owned liqueur producer among what were once more than 50 fruit liqueur houses in Burgundy. This liqueur's origin story is genuinely distinctive: it was created by bartender Samuel Boulton as his winning entry to Gabriel Boudier's Wizard Awards, a UK-wide competition inviting bartenders to design an entirely new liqueur flavour, with Boulton's concept beating out the competition and going on to be transformed into a full commercial product. Kaffir lime leaves themselves are a genuinely distinctive ingredient rarely seen in Western liqueur-making, prized in Southeast Asian cuisine for a rich, citrusy and slightly spicy aroma unlike ordinary lime — Gabriel Boudier undertakes a highly concentrated maceration of the leaves in alcohol, then reinforces the aromatics with lemongrass alcoholate and concentrated lime juice, with sugar dissolved cold directly into the infusion to preserve delicate top notes.
