Gabriel Boudier Nori Seaweed Liqueur is an extraordinary, umami-rich liqueur from the House of Gabriel Boudier in Dijon, France, bottled at 22% ABV in a 700ml bottle. Created by bartender Matthew Cusworth of Hoot the Redeemer in Edinburgh, it won the third Gabriel Boudier Wizard Award Competition in January 2020, beating out entries from bartenders across the UK. Made from dried Nori and Dulse seaweed individually infused in beet neutral alcohol for three weeks, then blended with grapefruit alcoholate and concentrated lime juice, it delivers a genuinely unique, coastal, savoury flavour profile — a completely new flavour tool for savoury cocktails and creative food pairings.

Gabriel Boudier is a family-owned French liqueur house founded in 1874 in Dijon, originally established in the house of Fontbonne before Gabriel Boudier took over the business in 1909 and renamed it after himself. In 1936, following Boudier's death, his widow sold the house to Marcel Battault, whose family has steered Gabriel Boudier ever since — making it the only remaining independently owned liqueur producer among what were once more than 50 fruit liqueur houses in Burgundy. Renowned worldwide for its award-winning Crème de Cassis de Dijon, Gabriel Boudier uses only natural fruits, flowers and botanicals across its range, avoiding artificial flavours and colours, and continues to innovate through its cocktail-focused Bartender Range alongside classic, traditional expressions like this Chestnut Liqueur.
There is genuinely nothing else quite like this in the liqueur category — a seaweed liqueur built from individually infused dried Nori and Dulse, blended with grapefruit alcoholate and concentrated lime juice to balance the marine, umami character against bright citrus acidity. It was created by bartender Matthew Cusworth specifically to solve a real problem he faced behind the bar: "As a bartender, I struggle to find consistent ways to introduce savoury flavours into my cocktails, so I'm very excited for Nori to launch and to see the inventive ways bartenders will use seaweed in their creations." His recipe won the third Gabriel Boudier Wizard Award Competition, a UK-wide bartender competition, securing first place at the Wizard Finals in Dijon in January 2020 before being developed into a full commercial product — even the label's watercolour design was created by Cusworth's own sister, Becca Boyce. It's built for genuinely creative use: signature serves include the Kanganawa Highball (Nori liqueur, Scotch whisky, soda, garnished with samphire or lemon zest) and The Geisha (Nori liqueur, gin, lemon juice, egg white, garnished with rose petals).
