Lark Muscat Cask Finish II continues the legacy of one of the distillery’s most celebrated releases. This Tasmanian single malt was finished in Muscat casks sourced from Seppeltsfield Winery, carefully chosen by Head Distiller Chris Thomson. The result is a whisky layered with syrupy sweetness, rich fruit, and indulgent spice, bottled at 44% ABV.
Nose: Buttery raisin toast drifts into spiced citrus and cocoa.
Palate: Sweet figs lead into golden syrup dumplings and creamy mocha.
Finish: Long and indulgent with notes of orange chocolate, coffee, and pecan.
In 1992, the Lark household became the first Australian distillery in 154 years to produce single malt spirit, marking the rebirth of Tasmanian whisky. What began at Bill and Lyn Lark’s kitchen table evolved into a fully fledged distillery, with the first Lark Single Malt Whisky released in 1998. Today, Lark Distillery operates in the Coal River Valley with a 1,800L wash still and 500L spirit still, producing whisky seven days a week while maintaining a focus on quality and craft.
This release represents the evolution of a fan-favourite Lark expression, showcasing the distillery’s flair for creative cask finishing. With Muscat casks from the famed Seppeltsfield Winery imparting deep, luscious flavours, it strikes a balance between Tasmanian innovation and timeless indulgence. Both a collector’s piece and a rewarding dram to open, it offers rarity, reputation, and rich complexity in equal measure.
